Paleo Chia Pudding with Topping
1/2c chia seeds
2c coconut milk
2 Tbsp maple syrup
1 tsp vanilla
Opt toppings: berries, mango slices, chocolate chips, unsweetened
shredded coconut, flavored vinegars, etc.
Mix together all ingredients except for toppings. Refrigerate for a
few hours, stirring occasionally, until seeds have gelled and it
becomes a pudding-like texture. Add toppings of choice.
