Paleo Strawberry Rhubarb Jam

Rhubarb is a new one for me. I’ve tasted it before in strawberry
rhubarb pie, which is so yummy. Strawberries have always been my
favorite fruit of all time, so anything that pairs so well with
strawberries is a friend of mine. So after looking curiously at the
rhubarb stalks every Saturday at the farmers market I finally decided
to buy some, and to find a way to cook them. Turns out, there are
plenty of ways to cook them! Even eating them raw was enjoyable. They
are sweet, but with the tanginess of cranberries. If you haven’t tried
them yourself, you should! In exploring this new
vegetable-that-tastes-like-a-fruit I decided to start with something I
know: a sweet treat involving both rhubarb and my beloved strawberries
(also fresh from the farmers market!) – how could I go wrong? This jam
is amazing. I strongly recommend trying it. And I know what you’re
thinking: what good is jam if you can’t eat bread? Well, let me count
the ways…
– on paleo banana bread
– on paleo pancakes or muffins
– on (homemade) nut butters
– on (homemade) chocolate nut butters
– with dark chocolate sprinkled on top
– by itself!!

Paleo Strawberry Rhubarb Jam

– 4c strawberries (hulled)
– 1 1/2c rhubarb (chopped)
– 3/4c honey
– 1Tbsp fresh lemon juice

Place all ingredients in saucepan and bring to a simmer. Simmer for
about 25-30 minutes, stirring occasionally. Let cool to room
temperature and spoon into jars. Makes a great gift if you can stand
to share!
