Pumpkin Coconut Yogurt (paleo, gluten-free, sugar-free)

I love all things pumpkin. Add spices and honey and it’s just a slice of fall heaven. To make this even better, I’ve combined my love of pumpkin with a lacto-fermented non-dairy and easy-as-pie yogurt! Intimidated by the thought of making your own yogurt? Don’t be – read on!

Coconut Milk Yogurt – the easy way:

– 3/4 can full fat coconut milk
– 1/2 can coconut cream
– 3-4 capsules of a probiotic

Pour milk, cream, and probiotic powder into glass jar and shake. Place on shelf for 3 days, shaking occasionally.  Then place in fridge and enjoy!

Now for the good stuff!

Pumpkin Coconut Yogurt

– 1 1/4 c. coconut milk yogurt
– 1/2 c. pumpkin purée
– 2 tsp honey, or to taste
– 1 tsp cinnamon
– 1/8 tsp nutmeg
– dash ground cloves

Combine all ingredients and store in fridge or eat right away like some people do. Not that I’d have any experience with that.
